HAZEL SMITH'S TURKEY DRESSING RECIPE

INGREDIENTS:
2 tablespoons shortening
2 cups self rising cornmeal (I use Martha White)
1 3/4 cups buttermilk
2 large onions, chopped
2 ribs celery, chopped
1 stick (1/2 cup) butter
5 eggs
3 tablespoons dried sage (or 2 tablespoons powdered)
1 tablespoon cider vinegar
1 teaspoon salt
1 teaspoon pepper
turkey broth

INSTRUCTIONS:
Pre-heat oven to 450 degrees. Melt shortening in an iron frying pan
until hot but not smoking. Quickly mix buttermilk and cornmeal. Add
melted shortening. Stir. Pour into pan and bake until golden; 15-20 minutes.

Toast 1/2 loaf (8-10 slices) white bread.
Crumble cold cornbread and toast.

In a skillet, saute onions and celery in butter until tender. Boil three eggs until hard cooked, cool and peel. Add onions, celery, boiled eggs, 2 raw eggs, sage, vinegar, salt and pepper. Mix well.

Add enough turkey broth (or canned broth) and stir (I use my hands) until mixture looks almost as moist as cake batter, solid (not runny).

Pour into a greased/floured (or spray with Pam) 9 1/2 x 13 pan. Bake at 375 degrees pre-heated oven 45 minutes.

Serve with baked turkey, giblet gravy, mashed potatoes, green beans with pumpkin pie for dessert. Yummy!!!
