Margaret Carr Potato Salad Recipe

Potato Salad
8 medium red potatoes- boiled -chilled & diced
1 onion - grated or chopped fine
2 Tbsp sugar
1 tsp mustard
2 Tbsp vinegar
1 stalk celery - chopped
4 to 5 radishes –sliced (for color)
1 1/2 cups mayonnaise or Miracle Whip
6 eggs - hard boiled
salt & pepper

Serves About 15 – (Estimate 1/2 potato per serving)

First you boil the potatoes with the jackets on. (This can be done the day before) Cool them - Peel and dice the potatoes into a bowl. Add chopped onions, celery, radishes and 3 hard boiled eggs (sliced).  In separate bowl mix mayonnaise, sugar, vinegar, mustard and salt and pepper. Pour the dressing over the potato mixture and stir.  Garnish with remaining 3 eggs. (Margaret likes to cut the eggs oblong and then make a flower design with them on the top of her potato salad. Chill. Serve.
