Jamie Oliver's Recipe: Hot Tuna Salad - Serves 1

3/4-inch thick tuna steak (7oz)
Extra virgin olive oil
Sea salt and freshly ground black pepper
3 ripe tomatoes, quartered
Juice of 1/2 a lemon
Handful of fresh basil leaves
2 tablespoons of crème fraiche
Handful of chunky torn bread (optional)

Get a frying pan very hot. Rub tuna with a little oil, season and sear for about 1 minute on each side (this will cook it rare).
Toast (optional) bread until golden at the same time.
Mix tomatoes, (optional) crispy bread and 10 basil leaves in bowl.
Stir in a little olive oil and half the lemon juice.
Season and put on plate.
Pound remaining basil in a pestle and mortar. Mix with crème fraiche.
Season with salt, pepper and lemon juice.
Place tuna beside salad and spoon sauce on top.
