Tips from Nutritionist Dr. Neal Barnard and How You Can Win His Book!

On Monday, Ellen had a candid discussion about diets with leading clinical researcher and nutritionist Dr. Neal Barnard. According to Dr. Barnard, each year the average American consumes 205 pounds of sugar, 10 pounds of chocolate and 32 pounds of cheese! Here are some of Dr. Barnard’s healthy alternatives to sugar, chocolate, cheese and even meat.

Alternatives to sugar:

Fresh fruit -- As a dessert, or as a snack; keep some sliced cantaloupe in your refrigerator, for example.
Maple syrup -- It’s sugary, but is so flavorful that people consume less.
Stevia

Alternatives to chocolate:

Cocoa powder -- Can be used for chocolate-dipped fruit, for example. Only the thin outer surface is chocolate.
Carob -- doesn’t cause migraines, as chocolate can.
Chocolate sorbet -- lower in fat and calories, compared with chocolate ice cream.

Alternatives to cheese:

Soy cheese -- widely available, but variable in quality.
Nutritional yeast -- makes a cheesy flavor in sauces and casseroles.
Avocado -- has the “mouth-feel” of cheese, without cholesterol or animal fat.

Alternatives to meat:

Veggie dogs, burgers, deli slices, etc.
Beans -- for burritos, tacos, and sauces.
Seitan -- a wheat derivative that tastes like meat.
TVP, tofu, and tempeh -- soy products that can simulate meat.

Loved his talk,but he didn' say any thing about chicken or fish.
are we not to eat them?

Hi Ellen and Dr. Barnard, I just watched your show and I have some nutritional questions. 've read alot of books on nutrition and other diets or food plans. My daughter is O Blood Type and we switched her diet to follow the higher proteins and less A type diet and she has gotten healthier. She was very sick with diahrrea and had to be taken out of the end of her 8th grade year due to weakness and fatigue, too. She has gotten strong and healthy despite Hashimotos Thyroiditis. Why is she doing better? I want to do what's best for her, so I'm seriously asking. Is the O's needs for more protein a myth, or is there validity to this? How can she follow what you recommend as an O type person?

p.s. She is allergic to wheat, oranges, white potatoes, tomatoes, peanuts, soy, . (I have 2 children like this, but the other is an A blood type.) We're a family of 5, so needless to say, mealtime advice would be sooooooooo helpful from you. I'd welcome your response!-Sheriyn from Boise

I'm disappointed about the cheese- my only caveat. However I would have to stress, moderation in everything. I don't eat fast food- ever, nor do I chow down on chocolate,chips or candy. However salt is an issue as I am addicted to Heluva Good Dips....my best advice to everyone: eat lots of veggies and fruit, don't touch fast food, eat meat in moderation, up the seafood and choose gluten free pastas and rice. Avoid packaged and frozen foods- fresh is always best!

And for goodness sake- workout!!!! Sweat!!! Gym or on the street, cardio for your heart and all your organs.

long before I had heard of dr. bernards book...

I turned 50!! yippeee for me!!!
anywho...I decided to change my eating habbits...well, i started changing the things I eat and have come up with some Very, Very, imaginitive alternitives to meat, cheese, milk,and desserts...you would not believe what i have as desserts...yum yum!!! I ALSO EAT ALLLLLLL DAY LONG.. EVERY 2 HRS. I AM STUFFING MY FACE....WHEN I AM HUNGRY..I EAT!!! I went from a size 14 to (as of today) a size 6. and I am healthy, happy and have the energy I had when I was 20...(from what i can remember...(it was the 70's)..I LOST WEIGHT AND INCHES IN 2 1/2 MONTHS!!!!....AND I AM HEALTHY!!!!!!!

I would love to have a chance to win the book by Dr. Bernard but I didn't see a place to enter.

eating meat is necessary for proper brain development

he doesn't eat cheese ?
why not gain more attention by saying everything in moderation ?

Thanks for having the Doctor on your show. I have been a vegetarian since 1992 but really want to become vegan. It is win win situation for everyone, particularly for the poor animals who are so horrifically treated on factory farms. God help them.

Ellen, I've been eating meatless for several years now. Initially, my youngest daughter, who lives with us, became a vegetarian when she was a teen, so I waa making meals for her and slowly my husband and I began to eat the same vegetarian meals I fixed for her, except for weekends, when I would let hubby chose what meats he wanted to grill or for me to prepare. He was an avid hunter and meat-and-potatoes guy for many many years. Four years ago, I lost a kidney to cancer and after talking to my doctors discovered that my sole kidney would function better without having to deal with meat, so now it's a rare ocassion when hubby and I will eat any meat. Hubby used to also drink whole milk until about the time I lost my kidney and now will only drink 2% milk. We are a LOT healthier for not having the excessive protein and fat in our system and our quarterly check-ups with our doctor for cholestoral levels has proven it.

Ellen, THANK YOU! My whole family is vegan -- in rural Kansas, no less -- and we have been for about 7 years with NO detrimental health effects despite what our cattle ranchers, dairy farmers and US government tell us. I was so pleased to see Dr. Barnard on your show -- his PCRM was a very helpful resource as my family was "making the switch" to eating healthy/vegan. I have a suggestion for dairy farmer Steve who commented below, and for all Americans who are reluctant to think for themselves and listen to experts who have nothing to gain by speaking the truth -- read MAD COWBOY by Howard Lyman - a dairy farmer who finally saw the light and made a difficult switch to help people eat more healthily (he gave up dairy farming!). Also, anything by John Robbins is good. Hey, everyone! We have only our health-- and a healthy planet -- to gain!!! Let's do it! Thanks again, Ellen.

People have been deceived for decades about animal products. My Mom is 90 and has severe osteoporosis and arthritis. Milk products actually does not make bones strong.
The egg industry is also extremely cruel and deceives us into thinking that eggs are healthy.
Eating mostly or totally a plant-based diet (as we were created to eat) is healthier physically and spiritually. Someday we will all give an account for every creature to their Creator as said in the Bible.

I've known about Dr. Barnard probably since he came on center stage in 1985. Not only does he offer sage advice re healthy diets, he has worked behind the scenes in trying to convince the big teaching hospitals to STOP USING LIVE DOGS FOR PRACTICE SURGERY. And guess what, his work is paying off and many of the prestigious teaching hospitals have found alternatives. We need more doctors of his calibre and some are found in the organization he started-PHYSICIANS FOR RESPONSIBLE MEDICINE. God bless you Dr. Barnard and all the doctors who care about the cruel use of animals in experimentation which by and large is unecessary and cruel.

Ellen,
I really enjoyed your show today and watched the Doc closely and listened. I just recently had major back surgery and have to walk regularly to exercise my back and to keep it mobile and stretched. After watching the doctor I feel like I learned so many things and am willing to some of his advice. I don't think I can totally give meat up, but I am going to try the sugar and dairy. I will keep you in the loop to how things are going. Thanks for introducing us to "The Doc". One more thing how come everbody in the audience get free gifts???

Fredyne: There are plenty of alternatives besides carbs. Sometimes it takes a little creativity to keep it from being monotonous, but that is with any eating lifestyle. I highly recommend www.vegweb.com . This is where I have found some of the most amazing recipes! It really is not more expensive, either you are buying meat and cheese, or you are buying their replacements. I have found it really evens out. Think about beans (all different kinds and they are cheap!!), try boca crumbles for sloppy joes, faux meat sauce, tacos... try tempeh for faux chicken salad or marinated wraps. Seitan can be homemade very very cheaply. You can do almost anything with seitan. Buffalo "wings", "chicken" nuggets, "chicken steak".... Good luck and don't give up. It took me a bit, but has now been my lifestyle for over 3 years and I will never go back!

I was beyond thrilled when I turned on the show today to see Dr. Bernard as your guest. People such as Steve E (comment below mine) are so narrow-minded they only see the almighty dollar and not the big picture. No matter what he says, the horrible effects of meat and dairy are a proven medical fact. It is not meant to offend or lessen the significance of his family, it is simply a fact. There are plenty alternatives in farming. Become an organic farmer. It is a huge growing trend and as the years go on, the demand is going to grow tremendously. I just saw a documentary of tobacco farmers on the brink of going out of business entirely. They switched their focus and now run thriving organic farms.

GO VEGAN! Do it for your health - do it for the environment - do it for the animals!

I just watched you show about diet, Dr Nesl Barnard. I would love to change the eating habiites of my family, but unforturnatly the cost of heather foods is very expensive. I have cut down on meat but I still have probems because I have to add carbs that are to very healthy inorder to streach meals. Some fruits and vegatables are also expensive.
I wish some one could help

You shows are always so interesting . and funny , Monday I really enjoy the segment with DR BARNARD, healthy habit eating , and how we can substitue meat , and cheese, in our habit eating and have a better health, I am 72 years old and I am very interested in breaking the bad and unhealthy eating , my cholesterol is a little hight, 20 lbs overweight , and suffer arthritis , I hope I can win his book and give my children and grandchildren the awarenes , how to eat healthy, and keep themselves in good health .Thanks Ellen your show is great and wishing you the best .Gisele , Philadelphia Pa

Dr Neal Barnard has changed my life with his book "Foods that fight Pain" I have RA and was a the point of not being able to walk on my feet in the mornings and in almost constant pain 24/7. I was in my 30's and the thought of long term affects of the meds I would have been on for life, sacred me I want to have quality of life for the future. I am controlling my RA by what I eat and have been pain and medicine free over a year now. I still see my doctor and she is very please with my progress.
I would recommend this book for everyone it covers to many ailments!Thank you for having him on your show!
