Tips from Nutritionist Dr. Neal Barnard and How You Can Win His Book!

On Monday, Ellen had a candid discussion about diets with leading clinical researcher and nutritionist Dr. Neal Barnard. According to Dr. Barnard, each year the average American consumes 205 pounds of sugar, 10 pounds of chocolate and 32 pounds of cheese! Here are some of Dr. Barnard’s healthy alternatives to sugar, chocolate, cheese and even meat.

Alternatives to sugar:

Fresh fruit -- As a dessert, or as a snack; keep some sliced cantaloupe in your refrigerator, for example.
Maple syrup -- It’s sugary, but is so flavorful that people consume less.
Stevia

Alternatives to chocolate:

Cocoa powder -- Can be used for chocolate-dipped fruit, for example. Only the thin outer surface is chocolate.
Carob -- doesn’t cause migraines, as chocolate can.
Chocolate sorbet -- lower in fat and calories, compared with chocolate ice cream.

Alternatives to cheese:

Soy cheese -- widely available, but variable in quality.
Nutritional yeast -- makes a cheesy flavor in sauces and casseroles.
Avocado -- has the “mouth-feel” of cheese, without cholesterol or animal fat.

Alternatives to meat:

Veggie dogs, burgers, deli slices, etc.
Beans -- for burritos, tacos, and sauces.
Seitan -- a wheat derivative that tastes like meat.
TVP, tofu, and tempeh -- soy products that can simulate meat.

We found a local doctor that is like Dr. Barnard. She cares more about getting us healthy vs. trying to treat symptoms after the fact. She has my wife and I on non-milk, healthy vegetable diet. It is such a shame that more doctors are concerned like this and trying to help us keep healthy. Her name is Amy Olson of Issaquah, Washington. If anyone is in this physical area, I can't recommend her and her approach strong enough. (it follows Dr. Barnard as close as I can tell).

I sure got a lot of good advice and tips from his program on public television. I also cut back a lot on salt, got the salt free seasonings. Lost about 7 pounds in 2 weeks, which had to be water. Finally saw why wheat bread is worse to eat than rye or pumpernickel.

Just saw this guy on pbs. For the first time in my life, I finally understand the main reason I, and most people got diabetes: intramyocellular lipids. Basically, too much fat from unhealthy food and not enough exercise. Sound familiar? But at least he puts it in a better way, explaining the basics that you need to understand how you're sick and how to get unsick. It kind of makes me think we live in a sick world based on greed that's killing everybody with unhealthy food, etc. Well gee thanks guys for killing us, pretty soon we'll all be dead.

Dr. Bernard is very committed to helping people.
I like what he has to say and the way he says it.
I wish there were more doctors like him.

My wife and I do not eat very much meat. We started this about a year ago due to my high cholesterol level. We are having a difficult time coming up with alternatives to meat and was hoping for some assistance when we saw Dr. Neal Barnard on your show. Unfortunately, all he suggested was tofu related items. In my research, I have found that soybean products are not very good for most peoples' health - especially children. They have been found to be toxic and contain high levels of hormones similiar to estrogen. With so many foods containing soy product, I think that it may be having a direct affect on the hormone levels of children and adults.

I'm SERIOUSLY addicted to McDonalds. I NEED to break the cycle. I need this book!!!

I just did a search for recipes,because I took out a book by Dr. Neal Benard at the library.I wish I had seen this show.
I'm on day two.I'm planning on going a week.IT'S WEIRD NOT EATING DAIRY AND MEAT.
I'm out of recipes.
I've tryed french toast,spaghetti squash,pumpkin brown rice,tortillas filled with amy's refried beans(yum),toast + jelly, green beans with parsley and strawberry smoothies with organic brown rice protein powder and maple syrup.

I've been vegan since 1994, and Barnard's "Eat Right, Live Longer" is still a book I look to for dietary and health information.

Similar to what other posters here have written, I come from a family where both parents suffered colon cancer (Mom died from it), Dad has had heart surgery twice; he has Type 2 diabetes; and skin cancer too.

Dr. Barnard has helped me and others understand how - by our food choices - we can join a population group in which the odds of being afflicted with these diseases are far lower than would otherwise be the case (i.e., if animal products had still been in our diet).

At 47, I look and feel great, and have a bright outlook as regards my health.

Even speaking as an atheist, I can say that spiritually, I value knowing my food dollars do NOT cause pain and suffering to our fellow sentient creatures. Moreover, plant-based food is far less intensive in its use of land, water and energy resources.

I went from 240 to 165 on a plant based diet. I look younger, feel younger, and have rid myself of back problems. I switch to a plant based diet for ethical reasons, but the health benefits are awesome.
