You Can't Beat Beets

Today for lunch I am having a delicious garden burger made of whole grain brown rice, and vegetables with lettuce, tomato, tofu cheese, pickles and sprouts on a whole wheat bun. I am also enjoying a soba noodle salad and some sweet potato salad with wasabi sauce. I’m also having a quinoa salad with red beets. Quinoa is an ancient grass from South America. It’s a member of the goosefoot family of plants, but you probably knew that. It’s hard to describe the flavor. I guess that it tastes sort of quinoa-ey.

I love beets. I don’t think there are any purple foods that I don’t love. Grapes, plums, eggplant, purple cabbage, purple cows, Goofy Grape Kool-Aid... excuse me, I just got some beet juice on my keyboard. I think it’s my keyboard. I don’t know that much about computers. Anyway, I got some beet juice on the typey thing. I’d better finish my lunch before I short things out.

Enjoy your lunch,
Ellen

Ellen: I, also, love beets, especially Harvard beets, but any kind of of beets. No one else in my family likes them, so if I eat beets I have to eat them all by myself. (so lonely). My friend, Ruth, lives 350 miles away & she loves beets, too, but that is too far to go for lunch.

Perhaps, we could get together one day, for lunch, and eat beets. That would be so much fun because you are such a fun person, and I am, too, usually.

Call me up, and we'll make plans! I love your show--it is the highlight of my morning.

Saw a bumper sticker that said:

"VEGETARIAN" is an Indian word for "BAD HUNTER".

I sure wish I had your chef.

I love the homemade grain-burgers - better and kinder than the meat stuff. Beets are great, too.

I had a "notuna" sandwich (chickpeas mashed w/ Nayonnaise, celery and Nori) with lettuce and tomato.

Go, Ellen!

Now Ellen, that lunch looks creepy and I would eat it as a challenge when you convince me you really typed that! LOL!

But I am so glad you are so healthy! Thats great! Now off to my Cheese Pringles!

Isn't delicious garden burger an oxymoron? I like my burgers to moo (no offense to the vegetarians). One day I'd like to see you eat something really ugly, like...an octopus. Or something.

Hey! I thought you didn't like beets? To quote from your book "My Point... and I Do Have One" (you're welcome for the plug)...

"There had to be a first person who ate beets. Why why why didn't that person tell everybody that it wasn't worth the bother? To this day, people are still eating huge forkfuls of beets and asking God in Heaven how anybody decided that this could be food. Or maybe that's just me." (or somethin' like that, I'm recalling off the top of my head)

Interesting, maybe your tastes have changed! ;)

Keep on keepin' on,
a longtime fan
