Stuffing My Lunch


Today for lunch I am having a cucumber and lettuce salad with a scrumptious tomato stuffed with tuna salad and another tomato stuffed with olives. It's topped off with a balsamic drizzle. My lunch is always delicious, but when my lunch is stuffed with other lunch, look out for a taste explosion! Some of my favorite foods are stuffed, like Oreos, double stuffed Oreos, stuffed mushrooms...

There are these things called Turduckens. John Madden, the football announcer is always talking about them. They take a turkey, stuff it with a duck and then stuff a chicken inside the duck, which is inside the turkey. I've never had one, but it's supposed to be delicious. My point is that an olive is delicious but an olive stuffed with a pimento is divine. An olive stuffed with a pimento stuffed into a martini is even better!

The best stuffed food of all though is stuffed food that you stuff in your mouth!

I have a great recipe for you that is sooo easy!!! It uses Oreos (which are stuffed). This is a kid friendly recipe as well.....kids love to get their hands messy!

When you are done eating these YOU will be STUFFED!!!

Okay here it goes:

Ingredients:
1 package of 8 oz. cream cheese
1 package of Oreo cookies
1 package of white chocolate chips

1. Let the cream cheese soften by leaving it on
the counter for about 30 min.
2. Crush entire package of oreo cookies (in a
blender...but crush 1/4 of the package at a
time).
3. After the oreos are fine crumbs, mix with
the cream cheese in a bowl.
4. Roll mixture into 1/2 inch balls.
5. After the balls are rolled place them on a
cookie sheet and place in refrigerator.
6. Melt white chocolate chips.
7. Take cookie balls out of the refrigerator
and dip them in the melted chocolate and
place them back on the cookie sheet.
8. After all have been dipped, put the cookie
sheet back into the refrigerator for about
10 min.
9. After 10 min is up, place the cookie balls
into a sealed container and store them in
the refrigerator until you want to eat
them.

What an exquisite lunch... The red plastic cup really tops off its beauty. Sometimes I drink out of a red plastic cup too. Something else that we all have are those plastic patio chairs (usually green).

I agree with you--stuffed things are cool and great! Stuffed animals are great too. Except not for eating. However, stuffed animals are good for cuddling. Stuffed food is not good for cuddling though, unless you are having a food fight...or you really, really love your food and want to show your affection for it.

Hi Ellen and All Ellen Fans,

I am not a big tuna person (unless it is fresh tuna) but this looks really great! I would really like to try it. Ellen how about putting the recipes for your lunch up here too? Ingredients, spices - everything we would need to try what you had. Cause this one looks - TOTALLY YUMMMMMMMMMMMMMMMMMMMY!

Last week I asked Ellen's fans to come together to write to Ellen on behalf of a boy named Kyle Hickok. He has been ill his whole life. In and out of hospitals. His Birthday is coming up on March 25th, he will be 12. He is the fourth great nephew of Wild Bill Hickok.

The Make A Wish Foundation was going to grant him a wish. One of his first wishes was to have dinner with Emeril Lagasse and Rod Stewart. Because he is such a sweet kid when the time came to make his wish he didn't wish for that. He wished for a vacation for his family, so they could all be together. A vacation that to date they have been unable to take because of him being in the ICU in the hospital.

I want to take a moment now to thank everyone who sent a shout out to Ellen and also to everyone who took it one step further and went to Kyle's CaringBridge website and left a message for him and his family.

I also want to ask that you please continue to leave comments on behalf of Kyle. His story touched me very deeply. I do not know Kyle or his family, reaching out to all of you just seemed like the right thing to do. I have also gone to Emeril's website to try to reach out to him - course I don't have Ellen's star power - but you never know till you try - and - I just had to try.

wow, knew people all over are bummed and after reading some of these comments it only made me really realize how much joy, laughter and freedom Ellen brings into our lives ... I thought I was the only one that felt that way when I watched her!! LOL .. well, guess no real chance for me to meet the Great One .. don't have a bad, sad story, I've been blessed, but I know a blessing when I see one, and that is Ellen. Thank you, Ellen, for giving so many an escape that is unique, fantastic, surreal (yet so real) precious. Hey Ellen,

Looks fabulous as always. How about throwing some asparagus or avocado or broccolini in there somewhere? You know what's really good in a veggie salad? Strawberries. Cut them up and give them a dash of black pepper before they go in the salad. It's fabulous. I like to toss in some grapes on occasion too.

The other night I asked my husband to get me a small bowl of ice cream---the plate he brought was ridiculous---2 big pieces of pink cake( left from a baby shower) surrounded by about 4 scoops of oreo ice cream and topped with about 10 marshmallows---I took a picture of it---

dear ellen; I watch your show everyday. I enjoy it so much. My daughter and I like to dance with you and your audience.I wish I could get to meet you someday. My cousin used to sit and put olives on all his fingers!!! and then bite 'em off... not his fingers!! LOL... silly(Smile)... the olives. That is a really great way ... fun way to eat olives. At the kids table that is!!!!... ok. I say even at the adults table. I remember graduating to the big table... what a relief!!! However, it was all adult conversation and I remember not knowing what to talk about and it made me miss the little ones cause you could talk about anything and you were a hit!!! ... the king of conversation! At the adult table was boring conversation... but a little sparked my interest then they'd go back to boring.. I mean I thought I would have something to contribute/add to the conversation... but by the time I could contribute the adults moved on... but I soon learned.. you have to be fast if you want to make a point!!!

Looks great, here comes something delicious:

3 pounds of apples
250 gramm dates
1 lemon
3 cinnamon-sticks
2 big spoons cocao
a little cadamon
250 gramm creme
powder of vanilla
maltsirup
- everything organic -

Press the juice of the lemon upon the apples after you peeled them and cut them into halfs, which you 1/4. Than take away the stones of the dates. Stamp the cadamon in the mortar.
Boil 1/4 litre of water, put the apples together with the dates (without the stones inside) into the pot together with the cocao, the cinnamon-sticks and the cadamon. After cooking, take away the cinnamon-sticks.
If it is mashed, sieve it ( menas more mash, mash, mash)

Than hit the creme until it is ready together with the vanilla.
Put it on nice plates: left: apples, right creme, between maltsirup (like ying and yang)

Dear Dottie Dearest, Ewe seem to be directly on target with your lunches, the tuna and olives both sound great. No bread or taters in sight...SMART! Where is the spoon for your tableware setting?
