Kaleidoscope Lunch


Today my lunch looks like a kaleidoscope. For anyone out there younger than 30, kaleidoscopes were what we had before video games. Those were simpler times. We were allowed to walk to school by ourselves. We didn't have the fancy jet packs that kids have nowadays. No one says nowadays anymore. Isn't it ironic that nowadays, "nowadays" is so waybackthen?

Anyway, isn't this another beautiful lunch creation? It's a simple and elegant spinach and kale salad with crab meat and tangerine slices. Did you know that kale is really good for you? It has a lot of antioxidants and is an anti-inflammatory. So if you're over oxidized or are really flammed, kale is the vegetable for you.

HI Ellen, Your show is fantastic and makes me laugh every day. I even have my 76 year old mother watching it when I have to go sit with her as she can't be alone. Around 3 in the afternoon she says hey isn't that funny lady on. Gotta love her. Anyway your lunch looks yummy even tho I just had a huge piece of carrot cake with cream cheese frosting. Yes. I've read that about Kale. I am oxidized .. damn those free radicals anyway! LOL So I went to Safeway today and I got my 10cent fuel discount!!!! YEAH!!!... I buy my gas/fuel.. for my car! LOL at a safeway gas location. Its great! I love my fuel discount!

I got some pistacio nuts... very high antioxidant and low calerie! Probably good on salads!

I got egglands best eggs as well. High in Omega 3's.

Vitamin E helps your body absorb the Omega-3.

Eating healthy is fun once you get the hang of it.

I also got some Garlic... I love garlic! Don't you! Lemon is really good for you too!

Bon appetite! Love your lunches. They always look soooo very tasty! And Beautiful! A lot of green leafy is good for you. Lots of vitamin A.

I saw your lunch....Looks Yummy!! I dont know if you like fish, Artichokes,capers,and wine (of course) if so I have a great low-cal Tilapia with white wine sauce I made up. Really good. Try it....

Tilapia with White Wine Sauce


Main Dish:

5 Tilapia filets (4oz ea.)
1 lb whole frozen Green Beans
1 med Onion sliced thin
1 14.5 can diced Tomatoes (no salt)
1t dried Basil
Salt
Pepper


The Sauce:

2 cloves Garlic minced
1 13.75 can Quartered Artichoke Hearts (in water)(drained)
¼ c white wine (Sauvignon Blanc)
½ c Chicken Stock
1 Lemon zested and half of juice
2 T Capers Pickled
½ T Corn Starch
2T Water

The Veggies:

Put onions and green beans in a 11X15 baking dish. Coat veggies with cooking spray and season with some salt and pepper. Place in a 350 degrees oven for 20 to 30 minutes, or until slightly tender. Remove from oven and stir in the can of tomatoes, Place back in oven and cook until bubbly, about 10 min.

The Sauce:

Coat a skillet with non-stick cooking spray, add garlic and sauté over med heat. (DON’T BROWN GARLIC) add the Artichokes (drained), Chicken stock, wine, lemon zest, and capers. Reduce to about half. Add lemon juice at the end. In a small bowl, mix cornstarch with 2 T of cold water and add to the sauce while stirring (this will thicken the sauce). Reduce the heat to low.

The Fish:

Season the fish with salt, pepper and basil.
Take the green beans out of the oven. Move them to one side of dish, place the fish in the bottom of the pan then cover with green beans. Making sure it is an even layer. Fish on bottom, green beans on top. Place back in oven for 10 to 15 minutes, or until the fish is opaque and flakes with a fork.

To Serve:

Uncover fish and place on plate, the green beans are your side dish, Top the fish with the White wine sauce and enjoy!

Approx 240 calories a serving.
Yields 4 servings

Add a 1/2 cup of rice if desired!!

Just wanted to let you know that I have been unable to watch the show for 2days and am having withdrawals.. so, I have come to find out that I am not only addicted to coffee, I am also addicted to your show! I had to have gallbladder surgery yeasterday (I don't recommend having one, they hurt) and am now recovering at my sisters house and "lucky me" her cable doesn't work... Darnit anyways - we've been to your fair city 3 times and never been lucky enough to be there when you are taping...I would LOVE LOVE LOVE to attend one of your shows while there - I'm from land-locked Kansas and just love you Ellen!
