Hi Ellen, LOVE your show!! I tried to make the fudge balls you and Paula made on the show last week with my kids today. They taste delicious!! However, I (like several others) am having a problem with the fudge getting thick enough to roll into balls. It almost has the consistancy of a stiff cake frosting. I have double checked my recipee and have re-watched the segment. I can't seem to figure out what I have done wrong. I put it in the refrigerator all day but it still doesn't seem to be getting any stiffer. Please help!!

hey ellen, im from austarlia and love your show!! i watched the episode with paula dean making the "fudge balls" (i think they were) dipped in white choc and caramel ( i think ) and then rolled in peanuts! i was wondering if i could have the recipe before christmas so i can cook it for my family and friends. i would appriciate it very much. keep up your awesome work and have a great xmas and hope you have a great 50th! thanks megan.

RECIPE
* 1/2 pound Velveeta cheese, sliced
* 1 cup (2 sticks) butter
* 1 teaspoon vanilla extract
* 1 cup chopped nuts
* Two 16-ounce packages confectioner's sugar
* 1/2 cup cocoa
1. Melt cheese and butter together over medium heat in saucepan.
2. Remove from heat, add vanilla and nuts.
3. Sift together sugar and cocoa in large bowl. Add cheese mixture. Use hands for final mixing!
4. Remove candy from bowl with hands and roll into balls. Add skewers.
5. Refrigerate for 30 minutes and enjoy!

I love your show and loved the espisode with Paula Dean. I've just tried making the chocolate cheese fudge and like some others have found it is turning out nothing like hers on your show. It's to gooey to make into balls. Tried adding more sugar, still does not work. I've double checked ingredients to make sure I did not miss something, even re-watched the clip showing it being made on your show. Even checked the recipe on food network, says same as on your site. Anyway to find out what viewers are doing different than she did.
Hate to end up wasting all these ingredients.
Hey Ellen. I made these for a Christmas party last weekend and they came out great, but... I really need to know how to make the caramel and white chocolate for coating it. That part of the recipe is not on the website. HELP! I want to make them for a cookie exchange this weekend.
